Ingredients

  • 2 lbs beef chuck, cut into chunks

  • 1 cup red wine (Cabernet Sauvignon or Merlot)

  • 3 cups beef broth

  • 3 large carrots, sliced

  • 3 medium potatoes, diced

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • 2 tablespoons tomato paste

  • 1 teaspoon Worcestershire sauce

  • 1 teaspoon dried thyme

  • 1 teaspoon dried rosemary

  • 2 bay leaves

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • 2 tablespoons flour (for thickening, optional)

Directions

  • Sear the beef (optional but recommended): In a skillet over medium-high heat, brown the beef chunks on all sides. Transfer to the slow cooker.
  • Deglaze the pan: Pour in the red wine and scrape up any browned bits from the pan, then add to the slow cooker.
  • Add remaining ingredients: Toss in the carrots, potatoes, onion, garlic, tomato paste, Worcestershire sauce, thyme, rosemary, bay leaves, salt, and pepper. Pour in the beef broth.
  • Slow cook: Cover and cook on LOW for 8 hours or HIGH for 4 hours until the beef is fall-apart tender.
  • Thicken the stew (optional): Mix 2 tablespoons of flour with a bit of water and stir into the stew. Cook for another 30 minutes.
