2 lbs beef chuck, cut into chunks
1 cup red wine (Cabernet Sauvignon or Merlot)
3 cups beef broth
3 large carrots, sliced
3 medium potatoes, diced
1 onion, chopped
3 cloves garlic, minced
2 tablespoons tomato paste
1 teaspoon Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 bay leaves
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons flour (for thickening, optional)
Directions
- Sear the beef (optional but recommended): In a skillet over medium-high heat, brown the beef chunks on all sides. Transfer to the slow cooker.
- Deglaze the pan: Pour in the red wine and scrape up any browned bits from the pan, then add to the slow cooker.
