Ingredients
– 1.5 lbs beef stew meat, cubed
– 3 medium potatoes, peeled and diced
– 2 carrots, sliced
– 1 onion, diced
– 3 garlic cloves, minced
– 4 cups beef broth
– 2 tbsp Cajun seasoning
– 1 tsp smoked paprika
– 1 tsp dried thyme
– 1 bay leaf
– Salt and pepper to taste
– 2 tbsp cornstarch (optional, for thickening)
Directions
- Place beef, potatoes, carrots, onion, and garlic in the slow cooker.
- In a bowl, whisk together beef broth, Cajun seasoning, smoked paprika, thyme, salt, and pepper. Pour over the ingredients in the slow cooker.
- Add the bay leaf.
- Cover and cook on low for 6 hours (or high for 4 hours).
- Optional: Mix cornstarch with 2 tbsp water and stir into the stew during the last 30 minutes to thicken.
- Remove the bay leaf and serve hot.
