This Spicy Cajun Beef Stew features tender chunks of beef, potatoes, and veggies simmered in a rich, spicy broth with Cajun seasoning. It’s super easy to prepare in a slow cooker.

Ingredients

  • – 1.5 lbs beef stew meat, cubed

  • – 3 medium potatoes, peeled and diced

  • – 2 carrots, sliced

  • – 1 onion, diced

  • – 3 garlic cloves, minced

  • – 4 cups beef broth

  • – 2 tbsp Cajun seasoning

  • – 1 tsp smoked paprika

  • – 1 tsp dried thyme

  • – 1 bay leaf

  • – Salt and pepper to taste

  • – 2 tbsp cornstarch (optional, for thickening)

Directions

  • Place beef, potatoes, carrots, onion, and garlic in the slow cooker.
  • In a bowl, whisk together beef broth, Cajun seasoning, smoked paprika, thyme, salt, and pepper. Pour over the ingredients in the slow cooker.
  • Add the bay leaf.
  • Cover and cook on low for 6 hours (or high for 4 hours).
  • Optional: Mix cornstarch with 2 tbsp water and stir into the stew during the last 30 minutes to thicken.
  • Remove the bay leaf and serve hot.
